HC Airsoft
I tried a search, which turned up a UK sales thread for them, but no recommendations where I might be able to source them on this side of the pond. I'm looking to install them on V2/V3 and V7 guns. Any help is appreciated. Thanks in advance.

Mcmaster Carr sells Sorbothane sheets in various sizes and thicknessess, you should take a look at that, you'll have to have a way to cut out the Sorbo relativly easily (Hole saws work well) or some form of round die, but that should cover you. Higher Durometer thickness will, in theory, last longer but offers less "absorbtion" which is why most kits like Tirador's on AirsoftMechanics includes a 1mm heavy durometer protective mat with his Sorbo. You could do any combination of thicknesses to get the thickness you do need.
HC Airsoft
and what's the accepted manner of adhesion? or do the sheets come with a sticky backing? I'd think something relatively heavy duty would be in order to put up with the battering they will recieve.
